Basic BBQ Rub

Use any spices you have in your kitchen.  Brown sugar, garlic salt, salt, Cajun seasoning, mustard powder, paprika and Bijou powder (it's a Cuban Spice, hard to find).  Start with the Cajun seasoning (Tones - Sam's Club)  and build on it from there.  Sometimes all I use is the Cajun seasoning.  Taste as you go!!!!


Flavored Olive Oils
Optional
I use different flavored Olive Oils, also.  Rosemary is great on Pork!!
If you can't find flavored oils, just use regular Olive Oil.

Here is a really great basic BBQ rub.

1/2 cup Paprika
1/4 cup kosher salt
1/4 cup sugar
2 tablespoons mustard powder
1/4 cup chili powder
1/4 cup ground cumin
2 tablespoons ground black pepper
1/4 cup granulated garlic
2 tablespoons cayenne

 

Let’s Make A Rub

Salt (1) Kosher - Fine Sea Salt - Coarse Sea Salt -

Celery Salt

Sugar (1 to 2) Dark Brown Sugar - Light Brown Sugar - Sugar In The Raw - White Sugar

Peppers (1 to 3) Ancho Chili - Black Pepper - Blended Pure - Chili Powder - Chipotle Chili - Cayenne Pepper - Green Peppercorns - Red Chili Flakes - Lemon Pepper - New Mexico Chili - Pink Peppercorns -

Szechwan Peppercorns - White Pepper

Savory Spices (1 to 4) Celery Seed - Coriander - Cumin - Dill Weed - Dry Mustard Powder - Fennel - Granulated Garlic - Hungarian Paprika - Onion Powder - Oregano - Sage - Smoked Spanish Paprika - Thyme

Sweet Spices (1 to 4) Allspice - Anise Seed - Cardamom - Cinnamon - Chinese Five Spice Powder - Cloves - Mace - Nutmeg - Star Anise

Other (1 to 5) Dried Chives - Dried Lemon Peel - Lemonade Powder - Dried Lavender - Dried Parsley - Dried Shallots - Poppy Seeds - Sesame Seeds

Wet Rubs And Marinades - To make any Dry Rub into a Wet Rub, add 1 part oil to 2 parts rub. To make a marinade, add ½ cup Olive Oil, I cup liquid such as water, Fruit Juice, wine or beer, and 1 Tablespoon Vinegar or Lemon Juice to each rub recipe. Marinade food covered in the refrigerator from 30 minutes to overnight.
