Buy good meat!!!!


Rinse them off with cold water.


Pat dry and coat with Olive Oil.


Put on your favorite rub.


Smoke them at 350.  You are NOT going to get crispy skin
at lower smoking temps!!!!!
You can slow smoke them at 225-250 and then crank the
heat to 350 the last 1/2 hour and put them near the fire box end.

Cook to an internal temp of 165!!!!!!!  Keep your temp probe away from the bone!!!!
