KickAssBBQ Class is being scheduled again for the Peoria, IL. area. 
The Class will be held 40 miles west of Peoria in the
Spoon River Valley in scenic Lewistown, IL.

 
 

Saturday Class  (9 a.m. - 4 p.m.)
$125.00 Class Fee (now includes SmokeBook and DVD and a Bottle of Original Rub)


We will provide everything you need.  Do not bring anything but an appetite!!!!!
You will smoke on many different types of smokers/grills.


Peoria Cooker
Weber Kettle
Brinkman Bullet
CharGriller Offsets
Weber Smokey Mountain


Whatever you have at home, we'll teach you how to smoke on it!!!

You will not be watching!!!  You will do the smoking yourself.
When you leave, you will know how to BBQ!!!!


You will learn how to buy, prepare and smoke the following meats:

Pork Butts (pulled pork)
Brisket
Boneless Pork Loin
Cheese
Ribs (Baby Backs and Spares)
Chicken
Salmon
ABT's  (you gotta try these)
Pig Candy!!!!! (and these, too)

Class discussions will be about:

Fire Management
Charcoal
Smoking woods
Rubs
Brining Meats

You will learn how to Smoke meats Hot and Fast (6 hours) or Low and Slow (12 hours)

Classes start at 9: a.m. and end between 3-4 p.m.  Fire Management at 9:00 a.m. Sharp!!!!

Rain, or shine, sleet or hail, snow or wind.  We smoke in ANY kind of weather.  (hey, ya gotta eat)

BBQ “101”
 

9:00 a.m. Fire Management, Charcoal choices and Smoking Woods. 
9:30 a.m.  Meat preparation and assigning Smokers to Students. 
10:00 a.m. Butts, Brisket, Ribs, Chicken and Smoked Baked Beans go on smokers.

11:00 Lets make a Rub.

12:00 noon Lunch (Pulled Pork, Chips, Smoked BBQ Beans and Slaw)

1:00 p.m. Salmon, Pig Candy and ABT's go on smoker.
3:00 p.m.  Everything comes off smoker.  Pulling Pork/Slicing Briskets.
Everyone takes home BBQ.
