
Pork Riblets (Rib Tips) These are the trimmings from Pork Spare Ribs

I marinated them overnight in beer. You do not need to do this, but
sometimes I do.

Put in an aluminum pan and cover them with Olive Oil.

On goes my rub.

In the smoker at 250.

I sauced them about the last 30 minutes using some Sweet Baby Ray's sauce
thinned with some Jack Daniels.
I love these greasy, grizzly nasty little things. I can only eat
about 1-1 1/2 lbs. |
