Pork Riblets (Rib Tips) These are the trimmings from Pork Spare Ribs.  You do not see them in stores very often.  You generally have to buy a Full Rack of Spare Ribs and trim them to get these Rib Tips.


I marinated them overnight in beer. You do not need to do this, but sometimes I do.


Put in an aluminum pan and cover them with Olive Oil.



On goes my rub.In the smoker at 250.  Smoke them to an internal temp of 160.
I sauced them about the last 30 minutes using some Sweet Baby Ray's sauce thinned with some Jack Daniels. 

Remember, when you sauce or glaze your meat, you have to do it in the last 30-60 minutes or you will burn that sauce!!!!




These are greasy, grizzly nasty little things. I can only eat about 1-1 1/2 lbs.
