Quick Cook Brisket

This Quick Cook method is used by some BBQ Champions in competitions. 
For those of you that can maintain a smoker temp of 350 degrees,
here is a method you should try if you do not have 12-15 hours to smoke.
 


Rinsed it off with water.  Sprayed with Jack and Apple Juice (50/50). 
You can just leave a little water on it if you don't spray.  It helps your rub stick better with moisture.  Smoke them fat cap down for the best Bark!!!!!



Add you favorite rub.  I spray it again until it's nice and wet, but not so wet the rub comes off.
I put this one on racks inside the aluminum pan.  I add a little beer to the pan.  Probe is in it.


I cranked the smoker to 375.  I covered her with foil at 140 internal.  I uncovered her at 180 so I could get that Bark nice and crispy!!!!!
 


She is at 195.  I am going to cover her again and let her rest for an hour.  She will probably go up another 5 degrees.



Sliced her at 200.  Ah, look at that Bark!!
