Smoked Beans

Your favorite Baked Beans.  I use a gallon can of Busch's Baked Beans.

Cut up about 1 lb. of Bacon. 
Render the Bacon in cast iron skillet if you have one.  I love cast iron.


I use 6-8 Jalapeno Peppers for 1 lb. of Beans  If you want the beans spicy, do not take out the seeds and stems.  Dice them.


Dice 1 large, sweet Onion.


After your Bacon is rendered, add the Onion and Peppers and sauté until Onions are translucent. 


Add 1/2 cup Brown Sugar.  I use Splenda in mine.
Mix all together. 


I do sometimes lay strips of thick Bacon on the top.  Sometimes I mix Honey and Jack Daniels (50/50) and pour on top of Bacon just to cover.

Put them on the smoker.  Smoker was at 250.


Keep your eye on that Bacon.  It can burn if you put that Honey and Jack on them.


When the Bacon is done, the Beans are ready. 




Done!!!!!  It's almost like Pig Candy, but you get the Beans, too.
