I bought these Spares already
trimmed with the trimmings included.

I sprayed them down with the Ol'
Jack and Apple Juice and added my rub I then sprayed them again
to keep the rub on. See the right
side? It has been sprayed again, the
left hasn't. Nice and shinny with Jack.

I put these Spares on a cooking rack
and will add a beer in the pan for
moisture.

They are on the smoker at 250-275 Degrees.
You can see that the bones are not exposed yet. These have been on
the smoker for about 3 hours.
I covered them (pan and all) with foil at 4 hours. I added another
Beer to the pan and I left them covered for 1 hour.
I uncovered them
to smoke for another hour. I glazed them with a 50/50 mixture of
Jack Daniels and Maple Syrup the last 1/2 hour.
You may want to heat that mixture in a pan on the stove to let some of the
alcohol burn off. Whew, I didn't and it WAS strong.

These are done. See how the bones are exposed about 3/4 inch?
That's what you want. It takes a little practice to judge when ribs
are done. Start seeing the bones and you are close.
